Low-alcohol and alcohol-free cider
How is alcohol-free cider made, and does "alcohol-free" mean no alcohol at all?
In short
There are two broad routes: make a normal cider and remove the alcohol, usually by vacuum distillation or by membrane processes such as reverse osmosis; or arrest or restrict fermentation so that little alcohol is ever produced.
The descriptive terms are regulated and the thresholds differ between jurisdictions. Under EU-derived rules, drinks above 1.2 per cent ABV must declare their strength, and terms such as "alcohol-free", "de-alcoholised" and "low alcohol" have specific meanings that are not identical across markets.
A product labelled alcohol-free may contain a small residual quantity of alcohol depending on the jurisdiction and the term used. Where the presence of any alcohol matters — in pregnancy, in recovery from alcohol dependence, for religious reasons, or with certain medication — the label’s figure and the producer’s statement are what to rely on.
Removing alcohol from a finished cider
Vacuum distillation is the established method. Reducing the pressure lowers the boiling point of ethanol so that it can be driven off at a temperature low enough not to cook the cider. It removes alcohol effectively, and it also removes volatile aroma compounds, which is why de-alcoholised products often have aroma added back — sometimes recovered from the same process stream.
Reverse osmosis and related membrane processes work differently: cider is forced against a membrane that passes water and ethanol while retaining larger molecules. The permeate is distilled to remove the alcohol, and the water is returned to the retained fraction. It operates at low temperature and is gentler on the drink, at the cost of more complex equipment.
Spinning cone columns and other low-temperature separation technologies achieve the same objective by a third route. All of them share the same fundamental difficulty: ethanol contributes body, sweetness perception and aromatic carriage, and removing it leaves a drink that needs rebuilding.
The results have improved substantially, and the technical problem is now largely one of restoring mouthfeel rather than of removing alcohol. Producers commonly add back juice, sweeteners or thickening agents to compensate for what was taken out.
Never producing the alcohol
Arrested fermentation stops the yeast early — by chilling, by filtration, by sulphiting, or by a combination — leaving a drink that is low in alcohol and high in residual sugar. This is the same family of techniques used to make sweet ciders, taken further.
Keeving is an established traditional version of the same idea. By stripping nutrient from the juice, the maker produces a fermentation that runs out of resources rather than out of sugar. Traditional keeved cidre is genuinely low in alcohol by this route, though usually at 2 to 5 per cent rather than below 1.2.
Blending unfermented apple juice with a small quantity of cider is a straightforward commercial route to a low-alcohol product, and dilution is another. Both are legitimate and both produce a drink closer to juice than to cider in character.
Some producers use yeast strains with limited fermentative capacity, or ferment at conditions that restrict alcohol production. These approaches are more common in beer than in cider but the principle is the same.

What they taste like, and why
Ethanol is not flavourless. It carries aroma compounds, contributes viscosity and perceived body, and adds a mild sweetness of its own. Remove it and the drink becomes thinner, and its aroma both weaker and differently balanced, because the remaining volatiles behave differently in a solution without alcohol in it.
De-alcoholised ciders therefore tend to taste more like apple juice than the cider they were made from, and producers respond by adjusting acidity, tannin, sweetness and carbonation to compensate. Higher acidity and firmer carbonation are the usual tools, because both supply structure that alcohol used to provide.
A second consequence is microbiological. Alcohol is one of the things that keeps cider stable; a drink without it is a sugary, low-acid-relative medium that spoils more readily, so alcohol-free products are generally pasteurised or sterile-filtered and preserved, and their shelf life once opened is short.

Read on 2026-08-24 in the assimilated text maintained on legislation.gov.uk, which is the version in force for Great Britain and keeps the EU numbering. Two provisions matter to cider and both are widely misquoted: the sulphite threshold is 10 mg/L rather than a percentage, and a labelled cider strength carries a tolerance of a full percentage point either way — twice what still grape wine is allowed.
