How much sugar is in cider, and what determines it?

In short

The sugar in a finished cider is whatever the yeast did not ferment, plus whatever the producer added back afterwards. A fully fermented dry cider can contain only a few grams per litre; a sweet commercial cider commonly carries tens of grams per litre, and concentrated styles far more.

Nothing about the fruit determines this on its own. Apple juice contains a great deal of fermentable sugar, and whether it ends up as sugar in the glass or as alcohol in the glass is a production decision.

CiderHQ does not publish per-product sugar figures, because they are measurements of specific products. Where a label declares carbohydrate content, that is the figure to use.

Where the sugar goes

Apple juice arriving at a press typically contains something in the order of 100 to 150 grams of fermentable sugar per litre, chiefly fructose with glucose and sucrose alongside. Yeast converts that sugar into ethanol and carbon dioxide, and if fermentation runs to completion very little fermentable sugar remains.

A cider is therefore dry by default. Sweetness in a finished cider is the result of a deliberate intervention: arresting the fermentation before it finishes, keeving so that the yeast runs out of nutrient, or fermenting to dryness and then adding sugar, juice or concentrate back.

Each route produces a different profile. Keeved cidre retains original fruit sugar and is low in alcohol because that sugar was never fermented. A back-sweetened cider has full alcohol and added sugar. An arrested fermentation sits between the two. The same figure on a label can therefore arise from very different processes.

Ice cider is the extreme case: the juice is concentrated by freezing before fermentation, so both the alcohol and the residual sugar end up high. Its sweetness is a defining feature of the style rather than an addition.

Sugar that is not fermentable

Not everything sweet in cider is a sugar the yeast could have taken. Sorbitol, a sugar alcohol, is present in apples in modest quantity and in pears in substantial quantity, and Saccharomyces does not ferment it. This is the reason a fully fermented perry retains a perceptible sweetness that a fully fermented cider does not.

Sorbitol counts as carbohydrate for labelling purposes but carries a lower energy conversion factor than sugar — about 2.4 kilocalories per gram under the EU rules, against 4 for sugars. It also has digestive effects at higher intakes, which is a general property of polyols rather than anything specific to perry.

Cider also contains small quantities of non-fermentable polysaccharides and pectin fragments. These contribute to body and mouthfeel and are not a meaningful part of the carbohydrate total.

A cider’s sugar content cannot be judged by taste aloneAcidity and tannin both suppress the perception of sweetness, and carbonation sharpens it further. A high-acid cider at 40 g/L of residual sugar can taste drier than a low-acid one at 20 g/L. Anyone who needs to know their carbohydrate intake — including anyone managing diabetes — cannot get that from the taste of the drink and should not try.

If carbohydrate intake matters to you

The honest answer is that cider is a variable and often poorly declared source of carbohydrate, and that alcohol complicates the picture independently of sugar. Alcohol affects blood glucose regulation in ways that are not a matter of its carbohydrate content, and the interaction with diabetes medication in particular is a clinical question.
