What makes a cider apple different from an eating apple?
In short
A cider apple is a variety selected for the qualities that matter in a fermented drink rather than the qualities that matter on a plate. In practice that means much more tannin, frequently lower acid, a good sugar concentration and juice that gives a drink with structure instead of one that tastes like thin apple juice.
The decisive difference is tannin. A traditional bittersweet cider apple can carry several times the phenolic content of a dessert apple, and that material is what gives cider bitterness, grip, colour and the capacity to age.
The other differences — size, appearance, texture, keeping quality — mostly stopped mattering once the fruit was destined for a mill, which is why cider varieties are often small, blemished, russeted or oddly shaped in ways no supermarket would accept.
What breeders were selecting for
A dessert apple is selected for eating out of hand: crisp texture, balanced sweet-sharp flavour, low astringency, thin skin, attractive colour, an even shape and the ability to survive a supply chain. A culinary apple is selected for cooking: enough acid to survive sugar, and flesh that either holds its shape or collapses to a purée on demand. A cider apple is selected for none of those things.
What a cider variety is selected for is juice: yield per tonne, sugar concentration, an acid and tannin balance that ferments into something with structure, and behaviour in the orchard that makes the crop worth growing. Uniform size does not matter because the fruit will be milled. Storage life matters only in the sense that fruit must survive a few weeks in a heap without rotting, and in several traditions the fruit is deliberately left to soften before pressing.
This is why the two groups do not look alike. A great many traditional cider varieties are small, densely russeted, streaky, lopsided or a colour no marketing department would choose. Those characteristics were simply never selected against.
The four things that actually differ
Three of those four are differences of degree. Plenty of dessert and culinary varieties make perfectly sound cider, and a great deal of the world’s cider is made from exactly that fruit — most notably in North America, where the historic orchards were planted with multipurpose varieties. Tannin is the exception, and it is why a cider made entirely from dessert fruit tends to taste thin and short however well it is made.

The classes, and why they always name a system
English-language cider writing sorts cider apples into four classes — sweet, sharp, bittersweet and bittersharp — on whether the juice sits above or below a threshold for acid and a threshold for tannin. That scheme is the Long Ashton classification, devised in Somerset for fruit grown in Somerset, and it is one scheme among several rather than the classification of cider apples.
The French scheme uses five families and cuts them differently, with an amère class more tannic than anything the English scheme separates out. The Asturian scheme adds a semiácida class with no English equivalent. Perry pears use a fourth arrangement. A single variety can legitimately land in different boxes under two systems, and the same variety can shift class between a cool season and a warm one as its acid falls.
This is why every classification statement on this site names its system. "Bittersweet" on its own is not a fact about a fruit; it is a fact about a fruit under a named scheme.
So can you make cider from ordinary apples?
Yes, and a great deal of the world’s cider is made that way. Most Polish, most modern American and a large share of British commercial cider is built on dessert and culinary fruit, and the eastern-counties English tradition has always been. The question is not whether it works but what the result will be short of, and that is knowable in advance.
It will be short of tannin, which is the property that separates cider from apple wine on the palate. A cider from dessert fruit has acid, sugar, alcohol and aroma and almost no phenolic structure, so it reads as lighter and finishes shorter. Nothing in the fermentation supplies that: tannin comes in with the fruit or it does not come in at all.
It may also be short of acid, and this one matters for safety rather than for flavour. Many dessert varieties are low enough in acid that the juice sits above pH 3.8, where sulphite becomes ineffective and the cider is genuinely exposed to spoilage. A culinary apple like Bramley’s Seedling is the opposite case and is the useful corrective: very high in acid, useless to eat raw, and one of the most practical things a home maker can add to a bland dessert-fruit blend.
What it will not be short of is sugar. Dessert fruit ferments to ordinary cider strengths without help, and the notion that ordinary apples make weak cider is a confusion with juice yield rather than with sugar concentration.
- Blend rather than substitute. A dessert-fruit base with a sharp culinary variety for acid, and crab apples or any available bittersweet for tannin, is a far better cider than any of the three alone.
- Measure the pH before deciding about sulphite, not after. This is where a low-acid dessert blend causes a real problem rather than a disappointing one.
- Expect a shorter finish and do not try to correct it with sweetness. Sugar occupies the palate the tannin was supposed to; the thinness returns as soon as it is accounted for.
- Windfalls and mixed garden fruit are ordinary cider material. What is not is rot: patulin survives fermentation and the control is at the fruit.
Vintage quality, and why most fruit lacks it
A small number of varieties are described as having vintage quality: the capacity to make a balanced cider on their own, without help from anything else in the blend. Kingston Black and Foxwhelp are the usual English examples; the description is a traditional judgement rather than a measured property.
Most cider varieties do not have it, and were never expected to. They were bred and kept as contributors: a bittersweet for body and tannin, a sharp for acid lift and a lower pH, an aromatic variety for a note the base lacks. Judging such a fruit by how it tastes as a single-varietal cider misunderstands what it is for.
