What concentrate is and what it changes
Is cider made from concentrate worse?
In short
Concentrate is apple juice from which most of the water has been evaporated, usually under vacuum at reduced temperature, leaving a stable syrup that can be stored for a year and shipped anywhere. Water is added back before fermentation.
What it changes is real but specific. Volatile aroma compounds are driven off during evaporation and are only partly recovered; some phenolic material is lost or altered by the heat; and the resulting juice is a standardised commodity rather than the product of a particular orchard in a particular season.
What it buys is the ability to make cider all year round, at consistent specification, from fruit grown wherever it is cheapest. Whether that is a loss depends entirely on what the cider is for, and the honest position is that concentrate produces a different drink rather than automatically a worse one.
How concentrate is made
Pressed apple juice is clarified, then passed through an evaporator that removes water under reduced pressure so that it boils at a lower temperature than it would at atmospheric pressure. The juice is typically reduced to around a sixth or a seventh of its original volume, at which point its sugar concentration is high enough that microbial spoilage is effectively impossible.
The volatile aroma fraction is driven off with the first water removed. Modern plants capture it as a separate aroma stream and can add a proportion of it back, but recovery is incomplete and the recovered fraction is not identical to what left. This is the step that accounts for most of the sensory difference between fresh juice and reconstituted juice.
The concentrate is then cooled, stored and traded. It occupies a fraction of the volume of the juice it came from, does not need refrigeration in the way fresh juice does, and can be held from one harvest to the next.

Why so much cider is made this way
Fresh apple juice is a perishable, seasonal, bulky liquid that ferments whether or not anyone wants it to. A producer working only from fresh juice must press their entire year’s requirement within a few autumn weeks, store it as cider rather than as juice, and accept whatever the season gave them. That is manageable at farm scale and difficult at national scale.
Concentrate removes all three constraints at once. It also allows a producer to hold a consistent specification across years, which matters when a product is sold as the same thing in every outlet. Most large-volume cider in Britain and internationally is made at least partly from concentrate for these reasons rather than as a shortcut.
Several traditions rule it out. Protected designations in France and Spain restrict or prohibit reconstituted juice, and the sidra natural and AOC cidre categories are defined partly by the absence of it. That is a category rule about what those names mean, not a general finding about quality.
How to tell, and what to conclude
Labels do not always say. In the United Kingdom, use of concentrate is not required to be declared on the label of a cider, and many producers who use fresh juice state so precisely because the alternative is invisible. A high declared juice content does not settle the question, because concentrate is counted as its juice equivalent.
Where it matters to a reader, the reliable indicators are positive claims — pressed from fresh fruit, single orchard, vintage-dated, or a protected designation whose specification forbids concentrate — rather than the absence of a negative one.
The conclusion worth drawing is narrow. Concentrate reliably costs aroma and reliably costs provenance. It does not automatically cost structure, balance or interest, and a well-made cider from concentrate will outperform a badly made one from fresh juice. The comparison that is usually being made is between an industrial product and an artisanal one, and concentrate is a correlate of that difference rather than its cause.
