Ageing changes what a cheddar asks for. Proteolysis breaks casein into peptides and free amino acids, which raises glutamate and therefore umami, produces the crunchy tyrosine crystals associated with long maturation, and leaves less intact protein available to bind tannin. Lipolysis adds free fatty acids and a sharper, more pungent aroma.

The practical result is that the tannin mechanism weakens as the intensity mechanism strengthens. Where a young cheddar is a straightforward test of acid against fat, an aged one is a question of whether the drink is loud enough to be heard, and that is answered by concentration, alcohol and length rather than by tannin alone.
