Recorded interactions
Written records, each citing the mechanisms it rests on.
Interaction holds
Welsh cider
The leek is a Welsh emblem and Welsh ciders are typically sharp and light in tannin, which is what a mild, sweet, low-protein vegetable can take without being erased.
Mechanisms: Matching intensity · Regional tradition
Interaction holds
Dry cider
Leeks are most often served either vinaigretted, which sets an acid floor, or in cream, which sets a fat load; a sharp dry cider answers both.
Mechanisms: Acid matches acid · Acid cuts fat
Interaction holds
Still perry
Both are quiet and gently sweet; the pairing works because neither dominates.
Mechanisms: Matching intensity · Contrast or complement
Strength is reliability, not rating. What each mechanism claims, and how far.
Combinations that work badly
Published as prominently as the cases that work.
- Barrel-aged cider — One of the widest intensity gaps available: a mild sweet allium has nothing to offer against oak, tannin and alcohol.
More on Leeks
Leeks are mild and sweet, with the sulphur compounds characteristic of alliums present at a much lower level than in onion or garlic. Slow cooking converts more of their sugars and softens the sulphur further.
The pairing is therefore about restraint, and about answering whatever the leek is dressed with. Vinaigrette makes it an acid subject; cream or butter makes it a fat one; plainly braised it asks only not to be overwhelmed.

Structured inference, not a written judgement — nobody has assessed these combinations. How authored records and derived matches differ.

Leeks is also a subject of FoodHQ, a sister HEKNO product: Cleaning and cooking leeks, and the classic cold vinaigrette treatment.
The styles involved
What each of these is, defined independently of anything it is served with.
Welsh cider
Cider from Wales, rebuilt over recent decades from a nearly lost tradition, with protected names for traditional Welsh cider and perry and a fruit inventory shared with the English border counties.
Dry cider
Cider fermented out or finished so that little fermentable sugar remains, leaving acid, tannin and alcohol to carry the palate.
Still perry
Perry without carbonation, in which the fruit’s sorbitol sweetness and its texture carry a drink that has no bubble to lean on.
What people ask next
Questions readers ask about the things this page mentions. Each one goes to the section that answers it rather than to a page written to receive the question.
- What is still perry
- What is welsh cider
- Why does my dry cider still taste sweet — Alcohol, glycerol and ripe fruit aroma all read as sweetness even when no sugar remains. High alcohol in particular is perceived as sweet before it is perceived as strong.

Peer-reviewed literature on apple phenolics and cider sensory perception
Various journals · peer-reviewed literature · registered as competent for this subject
Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. Individual papers are cited where a specific number is quoted.

BJCP Beer Style Guidelines — cider and perry categories
Beer Judge Certification Program · classification framework · retrieved 2026-08-24
Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
Denominación de Origen Protegida Sidra de Asturias
Consejo Regulador de la DOP Sidra de Asturias · designation authority · passage verified 2026-08-24
The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
