A high-gravity juice with almost no grip and modest acid — sugar and water, much as the name suggests.

Aroma

No aroma descriptors are recorded for Wasserbine, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

  • Perry pear juice runs far lower in assimilable nitrogen than cider apple juice, a difference the Long Ashton workers reported and this survey confirms across most of the varieties sampled. Several readings here sit below the level at which a ferment is generally expected to need feeding.
  • Proline is an amino acid a wine or cider yeast cannot assimilate without oxygen, so it does not count towards usable nitrogen. In these pear juices it routinely exceeds the whole assimilable amino pool, which is why a perry must can be rich in amino acids and starved of nitrogen at the same time.

Compare within a study to see where these figures sat among the other cultivars the same work analysed — which is a more robust statement than the figures themselves, because absolute values move between laboratories and the ordering inside one study mostly survives.

The lower Severn and Wye vales: mild, wet, and the only ground in Britain where perry pears have ever been grown at scale. Fruit was collected across three autumns, and the survey reports each collection separately rather than pooling the seasons.

Pears need a pollinator

Pears are not self-fertile. A variety needs another in blossom at the same time to set fruit, which is why the flowering band matters more in a perry orchard than the harvest window does.

About Wasserbine

Wasserbine is the odd entry in the modern Three Counties perry survey. Its name is German — Wasserbirne, water pear — and in central Europe that word describes a whole class of watery perry pears in the Austrian and south German Mostbirne tradition rather than any single variety. The National Perry Pear Collection’s hundred-and-twenty-one-variety register does not list it, and nothing CiderHQ has seen explains how a tree under that name came to be growing and analysed in Gloucestershire.

The juice fits the name. A 2022 analysis put it at 3.7 grams per litre of acid and 260 milligrams per litre of true tannin, the lowest phenolic grip in a survey of thirty-eight varieties, at a gravity of 1.063. It is also one of the very few in that set where the phenolic acid fraction — the browning phenolics, which taste of almost nothing — slightly exceeds the tannin fraction. Sugar and water, with a little acid.

CiderHQ records it under the English name it was analysed under, and does not treat that name as identifying any particular continental variety. Equating an English orchard tree with a central European group on the strength of a shared word is exactly the kind of inference this site declines to make.

Names, origin and identity

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

The name points at central Europe, where Wasserbirne is a general term for the watery perry pears of the Mostbirne tradition. How a tree of that name came to be growing and analysed in the Three Counties is not recorded, and the National Perry Pear Collection’s register does not list it.
