Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
British Columbia’s fruit growing splits between two environments that share almost nothing. The Okanagan and Similkameen valleys of the interior sit in the rain shadow of the Coast and Cascade mountains, receiving very little rainfall and relying entirely on irrigation; days are hot, nights are cool, sunshine is intense, and the diurnal swing preserves acid while sugar climbs, which is why the same valleys grow wine grapes. Low humidity keeps fungal disease pressure comparatively light. The coastal zone — Vancouver Island, the Gulf Islands, the Fraser Valley — is the opposite: mild, wet, cloudy, with a long cool season, high scab pressure and slower ripening that leaves fruit lower in sugar and higher in acid. Cider fruit planted on the coast behaves much as it does in maritime north-west Europe; the same varieties in the interior ripen earlier and richer.
Soils
Okanagan orchards sit largely on glacial silt and outwash terraces above the valley floor — free-draining, low in organic matter and dependent on irrigation and fertigation; coastal orchards are on heavier, wetter glacial and alluvial soils where drainage is the limiting factor.

History
How cider making here came to take the shape it has.
- Commercial orcharding in the Okanagan was established from the late nineteenth century on irrigated land, and the valley’s fruit economy has always been export- and fresh-market-facing.
- Coastal settler farms planted mixed orchards for household use, and a scatter of long-lived trees from that period survives on Vancouver Island and the Gulf Islands.
- There is no continuous commercial cider tradition in the province; the current sector dates from the 1990s onwards and expanded significantly after 2010.
- Provincial land-use policy protecting agricultural land, together with licensing that favours producers using local fruit, has shaped where cideries are established and what they are able to claim.
Culture

About British Columbia
British Columbia is best read as two orchard regions that happen to share a province. The interior valleys are irrigated near-desert: hot, bright, dry, with cool nights that hold acid while sugar rises. The coast is mild, wet and cloudy, with slow ripening and heavy scab pressure. Fruit behaves differently enough between them that a variety’s reputation in one is a poor guide to the other.
Neither environment produced an inherited cider tradition. The Okanagan was developed as an irrigated fresh-fruit economy from the late nineteenth century, and coastal farms planted household orchards. The province’s cider sector is a modern one, dating from the 1990s and growing substantially after 2010.
What distinguishes the coastal side is that a real proportion of its cider fruit is purpose-planted. Vancouver Island and the Gulf Islands have a climate close enough to maritime north-west Europe that English and French cider varieties behave more or less as they were selected to, and several producers work with them directly rather than with dessert-fruit surplus.
The interior’s cider is a different proposition: made largely from surplus dessert fruit in a valley whose land, water and capital are committed to fresh fruit and wine grapes. That is an honest description of the economics, and it explains why interior ciders more often lean on added fruit, hops or clean carbonated formats than on tannin structure.

Filling cider into lined aluminium, a format that blocks light completely, seals tightly and depends entirely on an intact polymer coating between an acidic drink and the metal.
Kegging
Filling cider into a sealed keg for gas dispense or into a vented cask for gravity and handpump service — two formats whose difference is not the container but whether the cider ever meets air.

Deciding what the trees are fed and how much, a balance in which too little nitrogen shows up as a difficult fermentation and too much shows up as canker and soft growth.

In a wild ferment several yeast species take turns before *Saccharomyces* finishes the job.
