What ageing does to cider
Does cider improve with age?
In short
Some does, most does not, and the difference is predictable from what the cider is made of. Ciders with substantial tannin and enough acid change in ways that are generally regarded as favourable over one to several years; light, fresh, low-tannin ciders lose their fruit aroma and gain nothing in exchange.
The chemistry is reasonably well understood. Tannins polymerise and eventually precipitate, so bitterness declines. Fruit esters hydrolyse slowly, so fruit aroma fades. Oxidation products accumulate, so oxidative and honeyed characters rise.
Bottle-conditioned cider ages differently again, because live yeast consumes oxygen for as long as it survives and then breaks down, contributing bready and savoury characters of its own.
The four processes
Tannin polymerisation runs continuously. Procyanidin chains link into longer ones; as chain length rises, bitterness falls and astringency initially rises; and eventually the aggregates become large enough to fall out of solution as sediment, at which point both decline. A heavily tannic cider therefore passes through a phase of increased astringency on the way to softening, which is why a young bittersweet cider and the same cider at two years can seem like different drinks in both directions.
Ester hydrolysis runs the other way. The esters that carry most fruit aroma are formed under fermentation conditions that no longer apply, and in an acidic solution they slowly revert to their component alcohol and acid. The rate is slow but the effect is cumulative, and it is why a cider bought for its fruit aroma should be drunk rather than kept.
Oxidation accumulates in proportion to oxygen ingress, which is set by the closure and the storage. Acetaldehyde rises, giving bruised apple and then sherry; phenolic oxidation deepens the colour; and, given enough time, the papery and flat characters appear. A cork admits more oxygen than a crown cap, which admits more than a can.
In a bottle-conditioned cider, autolysis adds a fourth process. The yeast, having finished, breaks down over months to years, releasing amino acids, nucleotides, mannoproteins and lipids. The sensory contribution is bready, nutty and savoury, and the mannoproteins add a little body and can bind tannin, softening astringency.

What storage decides
- Temperature is the dominant variable. Chemical reaction rates roughly double for each 10°C rise, so warm storage compresses years of change into months.
- Oxygen ingress is set by the closure and by how well it was sealed. This is why the same cider under cork and under crown cap can diverge substantially over a few years.
- Light causes light-strike in clear and green glass, producing sulphidic off-aromas. Dark storage is not optional for cider in pale bottles.
- Stability of temperature matters as well as its level; repeated cycling drives expansion and contraction that can draw air past a closure.
- Upright storage is normal for crown-capped cider. Bottles closed with a natural cork are usually kept on their side so the cork does not dry, as with wine.
Ageing is not maturation
It is worth separating two things that are often called the same. Maturation is what the producer does before packaging: months in tank, cask or bottle during which the cider settles, clarifies, undergoes malolactic conversion where wanted, and loses its rough edges. It is deliberate and it is monitored.
Ageing is what happens afterwards, in whatever conditions the cider finds itself, and it is not monitored by anybody. A cider that would have improved for three years in a cool cellar may be tired in one on a warm shelf.
The reason the distinction matters is that a producer’s statement that a cider will improve is a statement about a cider stored properly. It is not a promise about a bottle kept upright in a kitchen.
