What causes it
Phenylacetaldehyde is the principal honey volatile, and in cider it arises from the oxidation of yeast-derived 2-phenylethanol under slow oxygen ingress. A cider therefore acquires honey character as it ages, and the rate is set by closure permeability, headspace and storage temperature rather than by anything done at fermentation. Where honey has been added — in a cyser or honey cider — the mechanism is direct, and the additional sugars change the palate as well as the aroma. Botrytis-affected fruit contributes its own honeyed compounds, but this is uncommon in cider apples.
Honey is the mildest and earliest stage of the oxidative sequence in cider. As oxidation continues it is joined and then displaced by nutty and sherry notes, and finally by the flat papery character of the oxidation fault.

2-Phenylethanol
The yeast-made alcohol responsible for the rose and honey note in cider, produced from phenylalanine and one of the few floral aromas that is not carried in from the fruit.

Acetaldehyde

About Honey
Honey is a useful ageing marker precisely because it sits at the beginning of the oxidative path. A cider showing honey with its fruit esters intact has aged gently; one showing honey with the fruit gone has aged further than intended.
It also reads as sweetness. Like the acetate esters, phenylacetaldehyde raises perceived sweetness through learned association, so an aged dry cider can be described as sweeter than it was at bottling despite having no more sugar.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
