What causes it
Beeswax character comes from long-chain saturated fatty acids and their ethyl esters, released into the drink as yeast cells autolyse during extended lees contact. The same process releases mannoproteins and other cell-wall polysaccharides, which add body, so the waxy aroma and a rounder texture usually arrive together. It develops over months rather than weeks and is a signature of ciders left on their lees rather than racked promptly, including traditionally made bottle-conditioned products where the lees stay in the bottle.

Ethyl decanoate

About Beeswax
Beeswax is a texture-adjacent aroma and one of the clearest sensory reports on lees management. Where a producer has chosen extended lees contact for body, this is the aromatic cost or benefit that comes with it.
It is distinguished from honey by the absence of the sweet floral component: beeswax is dry where honey is sweet, and the two frequently co-occur in aged cider without being the same observation.

- What is racking in cider making — Racking is siphoning cider off the sediment it has thrown into a clean vessel, leaving the lees behind. It clarifies the cider and, in traditional practice, is also used to slow a ferment by removing yeast with the lees.
