What causes it
Ethyl butanoate and ethyl hexanoate are formed by yeast esterifying ethanol with short- and medium-chain fatty acids produced during lipid synthesis, and both carry a sharp tropical-fruit character at low thresholds. Their production rises with cool fermentation — the opposite of the acetate esters behind banana — and with unstressed yeast in a nutritionally adequate must. A cider showing pineapple has therefore usually been fermented cool and well fed, which is the same set of conditions that preserves fresh apple.

About Pineapple
Pineapple and banana are frequently listed together as tropical notes, which obscures the fact that they point in opposite directions: ethyl esters rise as temperature falls, acetate esters rise as it climbs. Recording which of the two dominates gives a reasonable read on ferment temperature.
The note fades with age, since ethyl esters of short-chain acids hydrolyse back towards equilibrium over months in bottle. A cider that showed strong pineapple at bottling will show less at a year.

The programme’s cultivar performance database gives juice chemistry, orchard behaviour, bloom and harvest timing and cider-maker tasting notes for 73 cultivars grown at one maritime site over fifteen years, and — unusually — publishes its classification thresholds alongside its figures, so the classification can be checked rather than taken on trust. It also states outright that its results diverge from the English ones.
