What causes it
Bubblegum flavouring is built from isoamyl acetate and ethyl methylphenylglycidate, and the cider version approximates it when a high acetate ester load — isoamyl acetate and hexyl acetate — coincides with 2-phenylethanol, the rose-scented higher alcohol yeast makes from phenylalanine. The combination of confected fruit and floral sweetness is what separates it from plain banana or pear drop. It is characteristic of warm ferments with aromatic strains and of nitrogen-limited musts where the Ehrlich pathway is pushed hard.
The individual components are present in nearly all cider. Bubblegum is the descriptor for the point at which their combined intensity displaces fruit character entirely, and above it the next word is solvent.

- What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
