Vinegar is regulated as a food ingredient with compositional standards for acidity and labelling, not as an alcoholic drink. This record exists inside a style ontology to explain a relationship and to stop a recurring confusion; cider vinegar is not a style of cider and is not drunk as one.

About Cider vinegar
Cider vinegar has a page in a cider ontology for one reason: to make clear that it is not a cider, and to explain why the two keep being confused. The confusion is understandable, because vinegar is what cider becomes if it is left in contact with air and nobody stops it.
The chemistry is straightforward. Acetic acid bacteria of the genera Acetobacter, Gluconobacter and Komagataeibacter oxidise ethanol first to acetaldehyde and then to acetic acid. Unlike yeast, they need oxygen — a great deal of it — so the reaction happens at surfaces and interfaces, which is why it takes hold in a half-empty barrel, in a cask on service, or wherever a film can form on standing cider. Seal the container and the bacteria cannot work.
That same reaction, occurring where it is not wanted, is the most common serious fault in traditional cider. A farmhouse cider slowly acetifying in a partly emptied vat, a bag-in-box left too long, a cask that has been on the bar for a fortnight — all are on the same path, just earlier along it. The distinction between vinegar production and acetification is entirely about whether someone intended it, and there is a threshold in every tradition beyond which the volatile acidity that gives cider lift becomes the acetic character that ruins it.
Deliberate production takes two forms. The traditional slow method exposes cider to air in a partly filled vessel and lets a bacterial mat — the mother — develop on the surface over months, which yields a complex vinegar with residual fruit character. The industrial submerged method aerates vigorously in a tank and completes the conversion in a day or two, producing a cleaner and much cheaper product. Both are legitimate; the slow method gives more to taste.
A note on the health claims that surround apple cider vinegar: they circulate widely, they range from plausible to entirely unsupported, and assessing them requires clinical evidence rather than cider expertise. This site does not evaluate them, and the honest statement is that the question sits outside the competence of the sources on which this record is built.
Tasting it
What to attend to here specifically, and what is routinely misread. The second list is the more useful one.
What to look for
- That it is not a cider. Acetic acid bacteria have converted the ethanol, so there is little or no alcohol left and the acid is acetic rather than malic.
- Whether it was made from cider or from a diluted sugar solution. The first carries apple character; the second is acetic acid with an apple label.
- The mother, where present. A raw, unfiltered cider vinegar carries a cellulose mat and it is the culture rather than a contamination.
What gets misread
- Treating it as a cider fault taken to completion. It is that in origin, and it is also a deliberate product with its own practice.
- Reading health claims onto it. CiderHQ does not publish health benefits for any of these products, and the folklore around this one is extensive.
Not a drinking proposition, and not assessed as one. Judged by smell and by a very small taste on the tongue rather than by the mouthful, because acetic acid at this concentration will overwhelm the palate for anything tasted afterwards.
What it is mistaken for, and how to tell
One observation per pair, chosen because it separates them. Several of these are not styles at all — a commercial term, a legal category, or a fault wearing the same description.
- A cider that has acetified — Intent and containment. A deliberate vinegar is made in a separate vessel, kept warm and kept away from the cellar; an acetified cider is a loss.
- Volatile acidity — Degree. Volatile acidity is a measurement on a cider; vinegar is the endpoint of the same process.
- Distilled vinegar with apple flavouring — The ingredients. A cider vinegar was cider first.

Wild fermentation
Letting the microflora already present on the fruit and in the press house carry the ferment, in a succession rather than as a single organism.
Oxidative maturation
Ageing a cider with a deliberate, measured oxygen supply so that tannins polymerise and soften and an aldehydic character develops on purpose, which is not the same thing as the oxidation fault.
Barrel ageing
Holding cider in wood — which may mean an old neutral vat used simply as a vessel, or fresh or spirit-seasoned oak used as a source of flavour, and the two are not the same operation.
Filtration
Passing cider through a porous medium to reach a stated visual brightness, at a real cost in colloidal material, body and aroma.
Pasteurisation
Heating cider enough to inactivate the organisms that would spoil it, either in the sealed package or in-line before filling, at a measurable cost in fresh aroma.
Bottling
Transferring finished cider into glass, where the dominant variable is how much oxygen the liquid picks up in the few seconds it takes to fill and close each bottle.

Acetification
The active conversion of a cider’s ethanol into acetic acid by acetic acid bacteria at an air interface — the process, running in the vessel, that produces volatile acidity.
Volatile acidity
The measurable fraction of acidity that can be steam-distilled off, dominated by acetic acid and read as vinegar sharpness in the nose and a hard, hot finish.
Film yeast growth
A pale, powdery or wrinkled film of aerobic yeast growing on the surface of a standing cider, consuming alcohol and acid and producing acetaldehyde.
Vinegar fly contamination
Small flies carrying acetic acid bacteria and spoilage yeasts directly into juice and cider, and depositing them wherever they land.
