Intermediate acidity with low phenolics. Together with the acid block this is where most admitted fruit sits.
The Consejo Regulador publishes a technological block only for varieties DOP Sidra de Asturias admits, and this fruit is not among them. The block here is CiderHQ reading descriptive sources against the Asturian definitions rather than a published characterisation, and is the weaker statement of the two.

About Manttoni
Manttoni is, with Goikoetxe, the cultivar a Basque cider maker names when they want to say the blend was thought about. Its virtues are balance and aroma: enough acid to contribute structure, enough sugar to contribute alcohol and weight, and a fruit character that survives a fermentation which strips most of the region’s fruit of any smell it started with.
The Basque cider tradition it belongs to was close to extinction in the mid-twentieth century and has been rebuilt since. The sagardotegiak — cider houses where the txotx season runs from January into spring and cider is drawn straight from the barrel — became a significant part of Basque cultural life again, orchards were replanted, and a research effort went into characterising which of the surviving cultivars were worth propagating. Manttoni came through that process well.
Its recorded susceptibility to fire blight, like Goikoetxe’s, is a live constraint rather than a historical footnote. Where a replanting programme is choosing cultivars now, disease behaviour under current pathogen pressure weighs as heavily as juice quality, and the Basque orchard of 2050 will reflect that.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

The highest-gravity fruit in widespread North American cider use — a small bronze russet from New York whose juice regularly presses above 1.060 and which many revival makers treat as their benchmark cultivar.

The Asturian regional agri-food research service, and the technical authority behind the Asturian cultivar classification and the analysis of sidra natural. SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.
