About Panenské České
Panenské České is a survivor cultivar. It flowers late, resists frost, crops in poor sites and stores longer than almost anything else in the central European repertoire, and those qualities kept it in Bohemian orchards for centuries in a climate that punishes tender fruit.
Czech cider is a small and recent category. What the country has long had is mošt — pressed apple juice, drunk fresh or fermented on farms — and a substantial orchard inheritance shared with the German-speaking lands to the west. A cultivar like this one, carrying Czech, German and English names, belongs to a central European orchard culture that national labels describe poorly.
As press fruit it contributes acid and a little skin-derived phenolic character. Small dark apples are consistently described across Europe as giving juice more "grip" than their analysis suggests, and the explanation is geometric: a tonne of small fruit carries far more skin, and skin is where the phenolics are. It is not a tannic apple in the French sense and it is a more interesting one than a large mild dessert cultivar.

Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

Boskoop
A large, russeted, extremely acid Dutch apple found at Boskoop in the mid-nineteenth century, grown across northern Europe as a culinary fruit and used heavily in German and Swiss *Most*.
Brettacher
A large, acid, exceptionally long-keeping Württemberg apple found as a chance seedling in the early twentieth century, and one of the most planted *Most* cultivars of southern Germany.
