Which type of cider press should I use?

In short

No press is best. Each one sits at a different point on four trade-offs: how much juice it recovers, how much air the juice meets, how hard it works the solids, and how much labour and capital it needs.

The most consequential decision is not the press itself but the match between press and mill. A fine mash on a traditional press yields badly; a coarse mash on a belt press yields badly. Getting that pairing right matters more than which family of press is chosen.

The second most consequential is oxygen, because oxidation at the press sets the colour and much of the phenolic character before fermentation has begun.

The comparison

Yields are given as relative bands rather than as figures on purpose. Published litres-per-tonne numbers vary by more with fruit condition, ripeness, milling and maceration than they do between press types, so a single number attached to a press is misleading. Where a producer needs a figure, the only reliable one is the one measured on their own fruit with their own equipment.

Choosing by what you are making

For a traditional, tannic, deep-coloured cider from bittersweet fruit, the combination that has produced it historically is a coarse mill, a period of maceration and a press that works the pomace hard in air — a screw press or a rack and cloth press. The oxidation is part of the style, not a fault to be engineered out.

For a pale, aromatic, fruit-driven cider, the priority is to keep oxygen and phenolic extraction down: a moderate grind, prompt pressing, a pneumatic press if available, and protection of the juice with sulphur dioxide or inert gas from the press onwards.

For volume production destined for filtration and carbonation, throughput and yield dominate and a belt press with mash enzyme treatment is the standard answer, with the juice’s solids and oxidation dealt with downstream.
