What a cider orchard yields
How much fruit does a cider orchard produce, and how much cider does that make?
In short
A traditional standard orchard produces a modest tonnage per hectare; a bush orchard on the same ground produces several times as much, because it carries many more trees intercepting much more light. Both swing substantially from year to year with biennial bearing and with the weather at blossom.
Converting fruit to cider adds a second variable: how much juice a tonne of fruit gives up depends on the cultivar, its ripeness and the press, so a tonnage figure alone does not determine the volume in the vat.
Why the systems differ so much
Yield ultimately follows light interception. A hectare of orchard receives a fixed amount of sunlight, and the fraction of it that lands on leaves rather than on grass determines how much carbohydrate the orchard can make. A standard orchard with forty large trees leaves a great deal of that light falling on pasture; a bush orchard with a thousand small trees in close rows intercepts far more of it.
Tree age matters as much as tree size. A standard orchard spends its first decade producing nothing and its last decades producing progressively less as trees decline, lose limbs and are not replaced. A bush orchard is deliberately maintained in the phase of life where output is highest and removed before the decline.
Management supplies the rest of the difference. A commercial bush orchard is fertilised, protected from disease, pruned annually and, where necessary, irrigated; a grazed standard orchard usually receives none of these. That is a difference in inputs as much as in structure, and it means the comparison between systems is never purely a comparison of tree size.

From fruit to juice
A tonne of fruit does not become a fixed volume of juice. Extraction depends on the cultivar — some cider apples give up juice readily while others hold it in a pulp that resists pressing — on ripeness, on how finely the fruit is milled, on whether the pomace is macerated before pressing, and above all on the press itself. A modern belt press and an old rack-and-cloth press working the same fruit will not return the same volume.
The direction of the trade is consistent: harder pressing recovers more juice and extracts more phenolic material and more solids with it. Pressing for maximum volume is not pressing for maximum quality, and where the two conflict the choice reflects what the cider is for.
This is why cider is more usefully discussed in litres of juice rather than tonnes of fruit once the orchard gate is passed. A grower talks in tonnes per hectare; a maker talks in litres per tonne; and the arithmetic connecting them is specific to the fruit and the press rather than a constant that can be quoted.
What yield does not tell you
A high-yielding orchard is not necessarily producing better juice. Heavy crop loads dilute both sugar and phenolics, so tonnage and concentration pull against each other. A block that yields well and presses to a low gravity may produce less alcohol per hectare than a lighter-cropping block of the same cultivar, which is not visible in a tonnage figure at all.
Nor does yield capture what the orchard is otherwise doing. The standard orchard’s low output is inseparable from the wide spacing, the old trees and the permanent sward that make it a priority habitat, and comparing the two systems on tonnes per hectare alone answers only one of the questions being asked. Both figures are true; neither is the whole account.

- Why are traditional orchards treated as an important wildlife habitat — A traditional orchard is a mosaic. Above the ground it behaves like wood pasture — widely spaced, open-grown, ageing trees with dead limbs, rot holes and decaying heartwood — and beneath it is permanent, usually unimproved grassland that has not been ploughed or heavily fertilised for decades. Both components are scarce in the modern lowland landscape, and the combination is scarcer still.
