Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
The Adelaide Hills exist as a fruit region because of elevation. The Mount Lofty Ranges rise several hundred metres above the plains around Adelaide, and the lapse in temperature with height converts a hot Mediterranean climate into one cool enough for apples, pears and cool-climate wine grapes. Summers are warm and dry rather than hot, nights are noticeably cooler than on the plains, and the winter is wet enough to supply chilling and to reduce irrigation demand relative to the lowlands. Rainfall concentrates in winter and spring, so summer drought stress still requires irrigation on lighter sites. The cool nights matter most: they slow respiration and help retain malic acid while sugar accumulates through hot days, giving juice with better balance than fruit from the surrounding lowlands. Spring frost is a genuine risk in the district’s valleys and hollows.

How cider making here came to take the shape it has.

About Adelaide Hills
The Adelaide Hills grow pome fruit for one reason: they are high enough to be cool in a state that otherwise is not. A few hundred metres of elevation above the Adelaide plains converts a hot Mediterranean climate into one where apples and pears hold acid, and that same shift is why the district became a cool-climate wine region.
Its fruit-growing history is a supply history. From nineteenth-century settlement the hills fed Adelaide with produce the plains could not reliably grow, and the orchards were planted for fresh market fruit. There is no documented traditional cider practice in the district, and the current sector should not be described as a revival.
Cider here dates from the national category growth of the 2000s and 2010s, and is often made by wine producers using equipment, cellars and cellar-door channels they already had. That shows in the product: cool controlled ferments, clean fruit expression, wine-style bottling and dry finishes.

- What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
- What is dabinett — The most widely planted English cider apple: a late bittersweet with soft, full tannin that ferments into a cider needing very little added to it. Long Ashton measured it at 0.18 per cent acid and 0.29 per cent tannin.
