Benzoic acid
A weak-acid preservative added as sodium benzoate, more useful the lower the pH, and encountered in cider mainly in low-alcohol and soft products rather than in traditional ones.

What it does in cider
- Inhibits yeasts, moulds and some bacteria in its undissociated form, which crosses cell membranes and acidifies the cytoplasm.
- Loses potency quickly above pH 4, because its dissociation constant is lower than that of sorbic acid — so it is more pH-dependent, not less.
- Is used chiefly where alcohol provides little protection, in low-alcohol, alcohol-free and soft apple drinks.
- Occurs naturally in some fruits, though not at meaningful concentrations in apples or pears.

About Benzoic acid
Benzoic acid belongs with sulphur dioxide and sorbic acid in the family of weak-acid preservatives, and it works by the same mechanism: the uncharged molecule crosses the membrane, dissociates inside, and forces the cell to spend energy on pH homeostasis instead of growth. Its dissociation constant sits lower than sorbic acid’s, which makes it more sharply pH-dependent — good in a genuinely acidic product, weak in a low-acid one.
That profile suits it to the products where it is actually found. Traditional cider relies on alcohol, sulphite and low pH together, and rarely uses it. Low-alcohol and alcohol-free apple drinks have no alcohol to help, are usually sweet, and are frequently at a pH where benzoate works, so the preservative appears there and on soft apple drinks generally.
Its permitted use, like sorbate’s, is set by food additive regulation rather than by the producer, and it varies by jurisdiction and by product category.
