What causes it
Malic acid is thermally stable, so heating high-acid culinary fruit or juice removes the fresh volatile layer while leaving the acidity untouched. The result is a cooked fruit aroma with a sharp taste under it, which is a distinctly different impression from cooked bittersweet fruit where low acidity makes the same thermal signature read as sweet and soft. Pectin released by heat contributes a slightly viscous, coating quality that reinforces the association with sauce rather than with juice.

About Apple sauce
The descriptor is narrow but precise, and it identifies a specific combination: culinary or sharp fruit plus thermal processing. It is common in mass-market products made from concentrate, since concentration is itself a thermal process and reconstituted juice arrives with this signature already present.
