What causes it
Heat does two things to apple aroma at once. It destroys the six-carbon aldehydes and the volatile acetate esters that carry fresh character, since both are thermally labile, and it generates new compounds — chiefly furanones such as 4-hydroxy-2,5-dimethyl-3(2H)-furanone, together with early Maillard products from the reaction of fructose with amino acids. The result is not fresh apple minus something; it is a different aroma with the fresh layer removed and a cooked layer put in its place. In cider it arrives through juice pasteurisation, through in-bottle or flash pasteurisation of the finished drink, or through warm storage over a long enough period to do slowly what heat does quickly.
A trace of cooked apple is normal and expected in any pasteurised product and in ice cider, where concentration necessarily involves it. Marked cooked character in a cider sold as fresh points at over-processing or at warm storage, and is recorded as a fault.

Fructose
The dominant sugar of apple juice and the sweetest of the common sugars, which is why apple juice tastes sweeter than its total sugar figure implies and why a stuck ferment leaves sweetness behind.

The largest usable nitrogen fraction in apple juice, and the raw material from which yeast builds both its own protein and most of the aroma compounds a cider carries.
Hexanal
The green-apple aldehyde generated within seconds of breaking fruit tissue, which gives fresh juice its cut-grass smell and is largely converted away by the yeast.

About Cooked apple
Cooked apple is one of the most informative descriptors on a commercial judging sheet because it reports on the thermal history of the product, which nothing on the label will tell you. Sterile filtration and pasteurisation are alternative routes to microbiological stability, and they leave different sensory signatures; this is the signature of the second.
It should be distinguished from oxidative character, with which it is constantly confused. Both flatten fresh fruit aroma. Oxidation replaces it with acetaldehyde, nuts and cardboard; heat replaces it with furanones and caramel. A cider can show either alone, and warm storage produces both together.
