Cooked juice
The flat, jammy, slightly sulphurous character of over-heated juice or concentrate, recorded as a processing fault.

What causes it
Juice evaporated to concentrate, or pasteurised too hot or too long, undergoes Maillard chemistry to the point where the products stop reading as caramel and start reading as jammy and slightly burnt. Above about 80°C sustained, sulphur-containing amino acids in the juice enter the reaction and contribute low levels of sulphur volatiles, which is why heavily heat-abused juice carries a faint cooked-vegetable edge alongside the jam note. Hydroxymethylfurfural accumulates in parallel and is used industrially as a marker of exactly this heat load, though it is not itself the smell.
Concentrate-based cider carries this note at low level as an unavoidable consequence of its raw material. Where it dominates, no downstream blending or sweetening removes it, because the fresh volatiles it replaced no longer exist in the liquid.

Amino acids
The largest usable nitrogen fraction in apple juice, and the raw material from which yeast builds both its own protein and most of the aroma compounds a cider carries.

The dominant sugar of apple juice and the sweetest of the common sugars, which is why apple juice tastes sweeter than its total sugar figure implies and why a stuck ferment leaves sweetness behind.
Furfural
A toast-and-almond aldehyde formed whenever sugars are heated, arriving in cider either from a toasted barrel or from heat treatment, and a reliable marker of cooked character.
Dimethyl sulphide
A sulphur compound that reads as cooked vegetable in quantity and adds an indefinable savoury depth in trace, and which builds slowly during storage rather than during fermentation.

About Cooked juice
This is the descriptor that names the taste of thermal abuse rather than of deliberate cooking, and it is worth separating from the ice-cider notes because the mechanism is the same and the judgement is not. A style built on concentration expects Maillard character; a juice that was simply overheated has lost something and gained nothing.
Its practical use is in blind assessment of mainstream products, where it distinguishes fresh-pressed from reconstituted raw material more reliably than any other single note.
