What causes it
As a pear ripens it accumulates decadienoate esters and simple ethyl and acetate esters together, while its six-carbon aldehyde precursors decline, so the green layer falls away and the fruit weight rises. Sorbitol, which pears carry at levels apples do not approach, contributes a soft sweetness that persists into the finished perry because yeast does not ferment it; that residual sorbitol is what gives a fully dry perry its characteristic impression of ripeness at zero fermentable sugar.
