What causes it
Pear aroma rests on a small group of unsaturated esters that apples do not make in quantity, chiefly ethyl (2E,4Z)-2,4-decadienoate and its methyl analogue, alongside the same six-carbon aldehyde set that fresh apple depends on. The decadienoates have extremely low odour thresholds — parts per billion — so a small analytical quantity produces a large perceptual effect, and they are what makes pear read as pear rather than as a soft apple. Perry pears also carry citric acid alongside malic, which apples effectively do not, giving the acidity a rounder shape that reinforces the impression of pear flesh.

Decadienoate esters
The esters that smell specifically of pear rather than generically of fruit, carried in from the fruit itself, and perceptible at concentrations that barely register on any instrument.
Hexanal
The green-apple aldehyde generated within seconds of breaking fruit tissue, which gives fresh juice its cut-grass smell and is largely converted away by the yeast.
Citric acid
A minor acid in apples and a much more significant one in pears, whose metabolism by lactic bacteria is the reason perry gains more butter and more vinegar from malolactic fermentation than cider does.
Malic acid
The acid of apples, which supplies almost all the sharpness a cider has and, through pH, decides how vulnerable that cider is to everything that could spoil it.

About Fresh pear
Fresh pear is the anchor of the perry lexicon and the note whose survival through fermentation separates a perry that tastes of its fruit from one that tastes of its yeast. It is fragile: warm ferments and vigorous CO2 evolution strip the decadienoates efficiently, which is one argument for the cool, slow fermentations traditional perry making favours.
The confusion with pear drop is worth stating plainly and is the single most common error in perry description. Fresh pear is the fruit’s own decadienoate esters; pear drop is isoamyl acetate and ethyl acetate from the ferment, and it occurs in ciders made without a pear anywhere near them.

The evidence base for the single most important chemical difference between cider and perry: pears carry substantial sorbitol, which yeast does not ferment, so a fully fermented perry retains sweetness a fully fermented cider cannot.
