What causes it
Perry pears carry both a distinct skin volatile fraction and a physical component apples lack entirely: stone cells, or sclereids, which are lignified clusters within the flesh that give the fruit its gritty texture. The skin also holds the fruit’s highest concentration of procyanidins and of the hydroxycinnamic acids that oxidise to give perry its rapid browning. The composite perception is dry, faintly dusty, faintly bitter, and it rises steeply with maceration time — which is why traditional practice presses perry pears quickly and why extended maceration is a rarer choice in perry than in cider.

About Pear skin
This descriptor names what separates traditional perry from pear juice, and it is the reason a perry made from Blakeney Red or Thorn tastes structurally unlike one made from dessert pears. The tannin in perry pears is generally lower than in bittersweet apples but sits differently on the palate, drier and less bitter.
Perry pear juice browns much faster than apple juice, so pear skin and oxidative notes travel together more often in perry than their apple equivalents do in cider. Where a perry shows pear skin without browning, the fruit was pressed fast and protected.

- How are apples pressed for cider — The fruit is first milled to a pulp, then that pulp is squeezed — traditionally in cloth-wrapped layers under a screw or hydraulic ram, and industrially in a belt or bladder press. Whole apples cannot be pressed usefully; they must be broken first.

The catalogue entry names Luckwill alone where the standard citation names Luckwill and Pollard as joint editors; CiderHQ keeps both names and records the discrepancy rather than silently following one catalogue. This is the foundational descriptive work on English perry pears and the ancestor of most later variety lists. It fails the TLS handshake over https, and over plain http it resolves to a Sedo domain-parking page: an earlier pass in this sprint recorded it as retrieved on the strength of an HTTP 200, which was wrong, and the correction is the point. The Centre publishes at nationalperrypearcentre.org.uk. It is the closest thing British perry has to an identity authority: it holds at least two examples of most known varieties, states that the DNA of most of them has been determined and is used as an aid to identification, and publishes a variety register with synonym lists.
