Low acid, high tannin. The class that has no real equivalent in dessert fruit and that defines West Country cider.

Basis: Below about 0.45% w/v acid and above about 0.2% w/v tannin.

Long Ashton recorded 0.21% acid and 0.21% tannin. The tannin figure clears the 0.20% threshold by a hundredth of a per cent, which places the cultivar in the bittersweet class by the narrowest margin in the composite table.

Aroma

No aroma descriptors are recorded for Collington Big Bitters, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. About Collington Big Bitters

Collington Big Bitters is a Herefordshire cider apple named for a parish north-east of Bromyard, and its name is a promise the analysis does not keep. Long Ashton measured it at 0.21 per cent tannin, which clears the scheme’s bittersweet threshold of 0.20 by one hundredth of a per cent, and at 0.21 per cent acid, which is low. "Big Bitters" describes a fruit near the bottom of its own class.

That is not a failing of the cultivar; it is a demonstration of what a threshold classification does. Barker’s 1903 scheme sorts cider apples on two cut-offs, and any scheme built that way produces cases sitting on the line — where a different season, a different orchard or a different analytical method would move the fruit into a different class without anything about the fruit changing. Collington Big Bitters at 0.21 and Perthyre at 0.18 are the same apple as far as a palate is concerned, and the scheme calls one a bittersweet and the other, on its own numbers, a sweet.

The name is worth reading as evidence in its own right. Somebody who used this fruit thought it bitter enough to say so, in a naming tradition that had no laboratory in it. What that tells you is that the language of cider fruit predates its measurement by two centuries, and that the two do not always agree.
