Farm mill and commercial plant: what changes with scale

What does a farm cider mill or a commercial cidery actually consist of?

The equipment differences between scales are less interesting than the systemic ones. What changes is not that a plant has bigger machines but that it has continuous flow, controlled temperature, measured hygiene and traceable records.

A farm mill making a few thousand litres works in batches, by eye and by season, and its constraints are labour and building temperature.

A commercial plant works to a specification and to a duty return, and its constraints are consistency, shelf life and the ability to demonstrate what it did.

The farm mill

A traditional farm operation is recognisable across the West Country, Normandy and Asturias in similar terms: fruit is gathered in autumn, tipped into a hopper, milled by a scratter, pressed on a pack or screw press, and run into whatever vessels the farm owns. Those vessels are frequently older than anyone working with them. Fermentation is wild or lightly inoculated, temperature is whatever the building offers, and the timing of everything is set by the weather and by the other work of the farm.

The equipment list is short: a fruit hopper or elevator, a mill, a press with its cloths and racks, a juice receiving tank, a pump or a gravity fall, vessels, and a rack of hoses. Cleaning is by hot water and hand. Measurement is a hydrometer and, increasingly, a pH meter.

What this arrangement does supremely well is make the cider the fruit and the place produce, with a minimum of intervention and capital. What it does badly is repeat itself. Two seasons from the same orchard through the same equipment can differ substantially, and the operation has few levers with which to correct that — which is why traditional producers blend across vessels rather than control each one.

The commercial plant

A commercial plant is organised as a flow rather than as a sequence of batches. Fruit is tipped, washed, sorted and elevated; a hammer or grating mill feeds a mash pump; mash is enzyme-treated and pressed on a belt or large pneumatic press; juice goes to a buffer tank, is clarified by settling, enzyme or centrifuge, and then to fermentation in jacketed stainless with temperature control and monitored gravity.

Downstream, maturation happens in temperature-controlled tanks, blending is done to a specification worked out on the bench, and stabilisation is by filtration, pasteurisation or chemical means depending on the product. Carbonation is applied or achieved in tank, and packaging runs on a line with rinsing, filling under counter-pressure, closing, labelling and coding.

Around all of this sit the systems that are invisible in a photograph and dominate the operation: a clean-in-place set, a laboratory or a laboratory contract, a hygiene schedule with records, a traceability system linking finished packs back to fruit intake, and whatever the jurisdiction requires by way of duty accounting and food safety management.

Locating yourself honestly

The reason to lay these out side by side is that a great deal of equipment advice is written from one scale and read at another. A technique that is essential in a plant may be pointless in a garage, and a practice that is charming on a farm may be indefensible in a business that sells nationally.

The things that do not change with scale are worth naming. Cleaning matters at every size. Oxygen matters at every size. Bottle pressure is dangerous at every size. Knowing the gravity, the pH and the temperature is useful at every size. Almost everything else is a question of volume and of what the operation is for.

The step that most often goes wrong is the one from garage to commercial, because it is not a step in equipment but a step into regulation: duty registration, food safety management, labelling law, and the obligation to demonstrate rather than assert. Anyone contemplating it should establish what their own jurisdiction requires before buying a tank.
