Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
East Anglia is the driest region in the United Kingdom and one of the sunniest, with a growing season shaped by continental rather than Atlantic air. Summers are warm and bright, rainfall is low enough that irrigation is standard in commercial horticulture, and humidity is well below western England’s, which sharply reduces scab and canker pressure. Winters are colder than in the west and spring frost is a serious risk on the low, flat ground, so blossom timing matters and frost-prone sites are avoided or protected. For fruit, the effect is high sunshine, good sugar accumulation, and — because the varieties grown are dessert and culinary types rather than bittersweets — juice that is bright, aromatic and high in acid with very little tannin. That composition, not a stylistic preference, is why eastern counties cider is dry, sharp and light-bodied.
Soils
Light, sandy and free-draining soils across much of the region warm quickly in spring but hold little water, so orchards are irrigated; heavier boulder clay in central Suffolk and Norfolk retains moisture better and carries most of the older orchard sites.

How cider making here came to take the shape it has.

About East Anglia
East Anglia is the strongest argument inside England against treating the West Country as the English cider tradition. The region has made cider for centuries, has one of the longest continuous commercial records in the country, and makes a drink that shares almost none of the sensory characteristics that English-language writing treats as definitional: no bittersweet backbone, little tannin, no farmhouse cloudiness, no draught service culture.
The reason is fruit. In the driest and sunniest part of Britain, the apples worth growing are apples worth eating, and dessert and culinary varieties are high in acid, aromatic and almost free of the phenolics that give West Country cider its grip. Juice like that ferments to something pale, sharp and light-bodied, and the sensible way to handle it is the way a winemaker handles a high-acid white: cool fermentation, protection from oxygen, and either bottle conditioning or a clean filtered finish.
That composition also creates a specific technical opportunity. Fruit grown on light soils under low rainfall tends to be low in assimilable nitrogen, which is precisely the condition keeving depends on, and several eastern makers have adopted the Norman technique for that reason. It is a good illustration of method following chemistry rather than nationality.
The region’s traditional standing is real but its scale is modest, and its orchards now serve fresh and juice markets first.
