Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Sussex shares the dry, bright, comparatively continental climate of the south-east: less rainfall than the West Country, higher summer sunshine totals, and a long ripening season that suits fruit intended to be eaten. The South Downs shelter the coastal strip and warm it further, while the Weald behind them is colder, wetter and slower to warm in spring, with frost pockets in the low clay country. Fruit grown on the greensand and downland fringe ripens well and reaches good sugar; fruit on the Weald clay ripens later and is more exposed to spring frost at blossom. Disease pressure is lower than in the west but not negligible, and drought stress in the sandy soils of the western part of the county is a real constraint in dry summers. As in Kent, these conditions push growers towards dessert fruit, and cider is made from that fruit rather than from a dedicated crop.
Soils
A varied county: fertile greensand and loam along the northern and southern edges of the Weald, heavy and cold Weald clay in the middle, thin chalk soils on the Downs. Orchards concentrate on the lighter, better-drained ground.

History
How cider making here came to take the shape it has.
- Sussex farms made cider for household and farm use in the same way as farms across southern England, but the county never had the specialised bittersweet orchards or the concentration of production that made the West Country a cider region in the commercial sense.
- The county’s orchard economy was oriented to London markets from an early date, and the fruit that mattered commercially was fruit for eating and cooking.
- Twentieth-century orchard loss removed most of the farm orchard stock, and there was no continuous commercial cider tradition to sustain a sector through the middle of the century.
- The current producer base emerged largely from the 1990s onwards, in the same period and often in the same locations as the county’s sparkling wine industry, and shares much of its equipment culture and market positioning.

About Sussex
Sussex is an honest example of a county where cider is a modern activity rather than an inherited one. Orchards have been part of its farming for centuries, but they were mixed household orchards or commercial dessert plantings, and no specialised cider fruit economy developed here of the kind that shaped Somerset or Herefordshire.
The climate is the reason. The south-east ripens fruit for eating better than almost anywhere else in Britain, so land, capital and skill went into dessert and culinary apples. Where cider was made, it was made from that fruit, and it was made in the quantities a household needs rather than the quantities a market absorbs.
What exists now grew up alongside the county’s sparkling wine industry from the 1990s onwards, and the resemblance is not accidental. Producers use similar equipment, similar cool controlled fermentations, similar bottle-fermentation techniques and similar routes to market. A Sussex cider is likely to be clear, dry, bottle-fermented and served cold in a wine glass, which places it a long way from West Country farmhouse practice.

- What temperature should cider ferment at — Most cider is fermented cool, commonly between about 12 and 18 °C. Cooler ferments keep more fruit aroma and run slower; above the low twenties the cider tends towards hot, solvent-like higher alcohols.
- What is dabinett — The most widely planted English cider apple: a late bittersweet with soft, full tannin that ferments into a cider needing very little added to it. Long Ashton measured it at 0.18 per cent acid and 0.29 per cent tannin.
- Can you make cider from shop bought apple juice — Yes, provided the juice contains no preservative — check for potassium sorbate or benzoate on the label. Pasteurised juice ferments perfectly well once yeast is added, because pasteurisation removes the organisms but not the sugar.
