What is a llagar, and what is Asturian cider fermented in?

The word llagar in Asturian means the press and the building that houses it — the cider house — rather than a vessel. English writing sometimes uses it loosely for a barrel, which is a mistranslation worth clearing up.
The vessels themselves are toneles or pipas: large staved casks, traditionally of chestnut and now often of oak or of stainless steel, standing upright or on their side and holding many thousands of litres.
Their scale matters. A very large cask has a low surface-to-volume ratio, so wood contact per litre is small, temperature is stable and oxygen ingress per litre is modest, and the result is a wooden vessel that behaves less like a barrel than like a slightly breathable tank.
The building, the press and the vessel
An Asturian llagar is a working cider house, and historically a social one: the press, the vessels, the space where the cider is drawn and poured, and in many cases a public room. The equivalent word in the Basque Country is sagardotegi, and the Basque fermentation vessel is the kupela. In both traditions the naming attaches to the place and the practice as much as to the object.
The press in a traditional llagar is a great timber beam or screw press of the family described elsewhere in this section, built into the fabric of the building. Many have been replaced by hydraulic pack presses and pneumatic presses while the building and its name remain.
The vessels stand in the same room. A traditional llagar holds several very large casks, and the cider from each is a separate lot that is tasted and blended or sold as it is. That vessel-by-vessel identity is central to how Asturian cider is thought about and sold.
Chestnut and the character of the vessel
Chestnut was the traditional timber for Asturian casks, and it is a genuinely different wood from oak: more porous, higher in hydrolysable tannin, and with a coarser grain that makes tight cooperage harder. Casks were often coated internally with a resin or wax preparation in older practice to control leakage and extraction.
The effect on the cider comes chiefly from three things rather than from wood flavour: the resident microflora of an old cask, which drives the wild ferment and the malolactic conversion that gives sidra natural its characteristic profile; the slow oxygen supply; and the very long, cool, undisturbed ferment that a large vessel in a cool building permits.
The resulting cider is dry, still, comparatively low in alcohol, and carries a lactic and slightly volatile character that in another tradition might be read as a fault and here is the style. That is a case worth stating plainly: the same analytical signature is a defect or a defining feature depending on the tradition it is judged in.
Modern practice
Stainless steel has moved into the llagar as it has everywhere, and many producers now ferment in steel while retaining wooden vessels for particular lots or for the last stage. The regulated designations in Asturias and the Basque Country set requirements on fruit and method rather than mandating a vessel material.
The pouring ritual — escanciar, the long pour from height that aerates the cider and raises a brief natural carbonation — belongs to the serving tradition rather than to the equipment, but it is the reason the cider is made still and is worth knowing about when reading anything about Asturian vessels.
