What a cider orchard is

What makes a cider orchard different from an ordinary apple orchard?

In short

A cider orchard is an apple or pear orchard whose crop is destined for the press, and almost everything about it follows from that. The fruit is grown for its juice chemistry — sugar, acid and tannin — rather than for size, colour or the appearance of an individual apple, so blemish that would reject a dessert apple is irrelevant, and fruit is picked later, often from the ground.

The varieties are also different. Most true cider and perry cultivars are inedible raw, being either too bitter, too astringent or too sharp, and a great many of them exist nowhere except cider country.

The crop is juice, not fruit

A dessert orchard sells individual apples, and the individual apple is the unit of quality. It must be a certain size, a certain colour, free of scab spots and bruises, and it must have arrived at the packhouse without a mark. Meeting that standard is what most of the cost of growing dessert fruit is spent on, and it is why a dessert orchard is netted, thinned, sprayed on a calendar and picked by hand into padded bins.

A cider orchard sells a tonne of fruit that will be milled within days. The unit of quality is the juice: how much sugar it carries, how much acid, how much tannin, and whether it is clean enough not to spoil the batch. A scab spot on the skin makes no difference to any of those. A bruise makes no difference either, because the whole fruit is about to be reduced to pulp. This single fact removes most of the cost structure of fruit growing, and it is why cider fruit can be grown at a price that would be impossible for the fruit bowl.

What it does not remove is the need for sound fruit. Rot is not blemish. A rotten apple carries mould, and mould carries both spoilage organisms and, in the case of Penicillium expansum, a regulated mycotoxin. The line a cider grower draws is not between pretty and ugly but between sound and rotten, and that line is drawn far more sharply than most readers expect.

The varieties are not the ones in the shops

The cultivars that dominate cider orchards were selected over centuries for juice, and most of them are not pleasant to eat. A bittersweet such as Dabinett or Chisel Jersey has high tannin and low acid; a bittersharp such as Kingston Black has both; a sharp such as Foxwhelp has acid at a level that puckers. Perry pears go further still, being in many cases genuinely unpalatable raw and useful only in the press.

Dessert and culinary fruit does appear in cider orchards, and in some traditions dominates it. North American cider has historically been made from whatever was planted — Baldwin, Golden Russet, Newtown Pippin — because bittersweets were never widely grown there. Spanish and Basque orchards use their own cultivar families, and German Apfelwein is made largely from sharp culinary and juicing apples. The distinguishing feature of a cider orchard is not that it contains bittersweets but that it is planted and managed for the press.

The practical consequence is that a cider orchard is planted for a blend, not for a fruit. A grower is choosing a set of varieties that will ripen across a workable season, pollinate each other, and deliver a juice with enough acid not to be flabby and enough tannin to have structure. That is a very different planting decision from choosing the dessert variety with the strongest market.

Three orchard systems, one crop

Cider fruit is grown in three broad systems, and they are so different from each other that a figure quoted for one is meaningless for another. The traditional standard orchard has large trees on vigorous rootstocks at wide spacing, usually over grazed grassland, and lives for the better part of a century. The bush orchard has small trees on semi-vigorous rootstocks in dense rows, is machine-harvested, and is replaced after a few decades. The half-standard sits between them and is the usual choice where a grower wants a manageable tree that still permits grazing.

Why the difference between systems matters beyond yield

The obvious difference between a standard orchard and a bush orchard is that the bush orchard produces several times as much fruit from the same hectare. The less obvious difference is that they are not the same kind of object at all. A bush orchard is a crop planting with a defined replacement date. A standard orchard is a semi-permanent habitat that happens to produce fruit, and after eighty years it contains decaying wood, hollowing trunks and an unploughed sward that took decades to develop.

This is why the orchard question in Britain is genuinely difficult rather than merely nostalgic. The traditional orchard is a designated priority habitat with a documented record of loss; the bush orchard is what made large-scale cider affordable. Both statements are true, and a cider site that reports only one of them is not being neutral.
