Recorded interactions
Written records, each citing the mechanisms it rests on.
Interaction holds
Apfelwein
Pretzels and Apfelwein are eaten together in Hessen; the drink’s sharpness cuts through a heavily salted, alkaline crust that otherwise coats the palate, and the salt suppresses the cider’s tannin.
Mechanisms: Acid matches acid · Regional tradition · Sweetness balances salt
Interaction holds
Medium cider
Coarse pretzel salt is applied at a very high level, and sweet–salt suppression addresses it directly.
Mechanisms: Sweetness balances salt
Holds only under stated conditions
Viez
The Saarland and Moselle cider tradition sits in the same bread culture, with a comparably sharp profile.
Mechanisms: Regional tradition · Acid matches acid
Strength is reliability, not rating. What each mechanism claims, and how far.
Combinations that work badly
Published as prominently as the cases that work.
- West Country farmhouse cider — The lye crust carries its own alkaline bitterness and the salt has already reduced salivary lubrication; firm tannin on top of that produces a dry, harsh combination.
More on Pretzel
The pretzel’s defining feature is the lye dip, which raises the surface pH and accelerates Maillard browning to give the dark, glossy crust and its distinctive faintly alkaline, mineral bitterness. Coarse salt is applied on top of that.
Salt and a low bitterness are therefore the properties a drink meets, and sweet–salt suppression is the most useful mechanism. Tannin is the thing to avoid, because the crust’s own bitterness is not the kind salt suppresses well.
Derived by CiderHQ from the documented mechanisms

Structured inference, not a written judgement — nobody has assessed these combinations. How authored records and derived matches differ.

The styles involved
What each of these is, defined independently of anything it is served with.
Apfelwein
The dry, sharp, still apple wine of Hesse, fermented out from culinary and local fruit and served in ridged glasses from a stoneware jug.
Medium cider
Cider carrying enough residual or added sugar to be perceptible without dominating, the commonest sweetness level in British retail.
Viez
The cider of the Moselle and Saarland, dry and still in the local manner, drunk from a distinctive lidded pot and named from a word for the second pressing.
What people ask next
Questions readers ask about the things this page mentions. Each one goes to the section that answers it rather than to a page written to receive the question.
- What is a medium dry cider
- What is apfelwein — Apfelwein is the dry, still, tart apple cider of Hessen in Germany, known locally as Ebbelwoi and served from a stoneware jug into a ridged glass. Despite the name it is a cider, not a wine in any technical sense.
- What is a traditional west country cider blend — Predominantly bittersweet fruit for body and tannin, with a proportion of sharp fruit for acidity and sometimes a smaller share of bittersharps for both. The exact composition varied by farm and by what was in the orchard.

Peer-reviewed literature on apple phenolics and cider sensory perception
Various journals · peer-reviewed literature · registered as competent for this subject
Registered as a class rather than as one paper, because the mechanisms CiderHQ describes — tannin chain length driving the split between bitterness and astringency, salivary protein precipitation, enzymatic browning — are established across many studies rather than resting on any single one. Individual papers are cited where a specific number is quoted.

BJCP Beer Style Guidelines — cider and perry categories
Beer Judge Certification Program · classification framework · retrieved 2026-08-24
Opened on 2026-08-24, and the edition matters. CiderHQ registered the 2015 cider guidelines; BJCP has since published a 2025 cider edition, and the old URL now redirects into the current guidelines index. A competition style guide is a dated framework rather than a standing definition, and citing the wrong edition of one is the same class of error as citing a superseded specification. CiderHQ treats BJCP as one competition framework among several and never as the universal cider taxonomy.
Denominación de Origen Protegida Sidra de Asturias
Consejo Regulador de la DOP Sidra de Asturias · designation authority · passage verified 2026-08-24
The regulating council for Asturian cider. Read on 2026-08-24, and it turned out to carry far more than a permitted-variety list: an agronomic and technological characterisation of each admitted variety, with total acidity, total polyphenols, vigour, flowering, ripening, cropping and susceptibility to fungal disease. The characterisation is credited to SERIDA’s fruit-research programme. Two things it settles are corrections to what CiderHQ previously held: Asturias sorts cider fruit into nine technological blocks rather than five, and it publishes acidity as sulphuric acid rather than malic. The figures are transcribed into `data/trials/serida-asturias.ts` and cite this source, because this is where they were read.
