Climate and land
The first thing to know about a cider region, because it sets what the fruit can be. Ripening date, the acid that survives to the press and the sugar that reaches the vat are all decided here, and they are what makes one tradition's answers wrong for another's fruit.
Kent is one of the driest, sunniest and warmest counties in Britain. Sitting in the continental rain shadow of the south-east, it receives markedly less rain than the West Country, accumulates more summer heat, and has a longer, brighter ripening season. That combination is what makes it dessert fruit country: apples grown here reach the sugar, colour and finish that eating fruit is judged on, which cider fruit does not need. The trade-off is spring frost, since clear, dry, high-pressure conditions in April produce sharp radiative cooling and the county’s low-lying orchard ground can lose blossom outright; frost protection has been a standard part of Kentish orchard management for a century. Lower humidity reduces scab pressure relative to the west, but drought stress in dry summers is a real constraint and irrigation is normal in commercial orchards rather than exceptional.
Soils
The brickearth and loam soils of the north Kent plain and the greensand belt are among the most productive fruit soils in Britain — deep, warm, free-draining and easily worked. The Weald clay to the south is heavier and colder, and was traditionally hop and pasture ground rather than orchard.

History
How cider making here came to take the shape it has.
- Kent’s fruit growing was established on a commercial basis from the sixteenth century, supplying London by river and road, and the county’s orchard economy has been market-facing for far longer than most English fruit regions.
- Cider was made in Kent throughout that period, but as a secondary use of a crop grown for other purposes — an important structural difference from the West Country, where the fruit exists for the drink.
- East Malling Research, founded in the early twentieth century, systematised rootstock selection and orchard system design, work now embedded in NIAB and used internationally.
- The second half of the twentieth century saw the county’s orchard area contract sharply under import competition while intensifying: fewer hectares, far higher yields, and a decisive move to dwarfing systems.
- A modern Kentish cider sector emerged from the 1980s onwards, working mostly with dessert and culinary fruit, and often positioned closer to wine than to West Country cider in how it is made and presented.
Culture
What the drink is for here, and the occasions and rooms it belongs to. This is not decoration around the cider — in several of these places it is the part that decides how the cider is made.

About Kent
Kent complicates the English cider story in a way that is worth taking seriously. It is by a wide margin the country’s most important apple-growing county, and it is not an important cider county, because its fruit is grown to be eaten. Cider here has always been a use for what the fresh market would not take, and that inversion of the West Country relationship — where the orchard exists for the press — changes everything downstream of it.
The fruit is dessert and culinary: low in tannin, clean, aromatic, often high in acid. Juice from it ferments to a light-bodied, bright, comparatively simple cider without the phenolic grip that bittersweet fruit gives, which is why Kentish cider is usually made in a way that plays to those strengths — cool fermentation with selected yeast, filtration, carbonation, and frequently a single named variety on the label. That is closer to how the county makes wine than to how Somerset makes cider.
Kent’s more lasting contribution to cider is agronomic rather than vinous. The rootstock series developed at East Malling from the 1910s onwards gave growers control over tree size for the first time, and it is the technical foundation of the high-density bush orchard. Every cider orchard planted anywhere in the world to be sprayed from a tractor and harvested from the ground rests on work done in this county.
The county also demonstrates why the Long Ashton classification needs its context stated. Kentish fruit sits almost entirely in the sharp and sweet quadrants, so a scheme designed to predict how bittersweet-based blends behave has very little to say about it. Kent is not a deficient cider region; it is a region the English classification was not built to describe.

- What is dabinett — The most widely planted English cider apple: a late bittersweet with soft, full tannin that ferments into a cider needing very little added to it. Long Ashton measured it at 0.18 per cent acid and 0.29 per cent tannin.
- Can you make cider from shop bought apple juice — Yes, provided the juice contains no preservative — check for potassium sorbate or benzoate on the label. Pasteurised juice ferments perfectly well once yeast is added, because pasteurisation removes the organisms but not the sugar.
- How is cider carbonated — Either by dissolving carbon dioxide into finished cider under pressure, or by letting a small second fermentation produce the gas inside a sealed bottle or tank. The first is faster and more repeatable; the second leaves sediment and a finer bead.
