About Pediococcus species

Pediococcus is the lactic genus of the long, quiet middle of cider making. Where Leuconostoc is a fast early coloniser and Oenococcus does its work in a defined burst, pediococci grow slowly through maturation, often in a cider that is being left alone precisely because it is thought finished. By the time the problem is visible it has had months.

Ropiness caused by Pediococcus differs chemically from ropiness caused by Leuconostoc even though the two look alike in the glass. Pediococci produce a β-1,3-glucan rather than a dextran, and importantly they do so without needing added sucrose, so this route to ropiness is available in a cider that has had nothing added to it at all. Cider and perry are more susceptible to glucan ropiness than most fermented drinks, and it is a fault with a long history in the West Country literature.

The second common contribution is diacetyl. Small amounts read as a soft buttery note that some traditions accept; larger amounts read as butterscotch or popcorn and are generally regarded as a fault. Whether diacetyl persists depends on what is left to reduce it — yeast lees will convert it to the much less aromatic acetoin, so a cider racked bright and then infected by pediococci keeps its diacetyl longer than one still on lees.
