What causes it
Dried apple rings smell as they do because dehydration removes the volatile fresh fraction while browning reactions — both enzymatic and non-enzymatic — proceed in the concentrated remainder. Cider reaches a perceptually similar place through moderate oxidative maturation: the aldehydes and light esters have gone, acetaldehyde and phenolic oxidation products are present but have not yet reached the sherried stage, and what remains reads as apple with the water taken out of it. It is a common note in ciders between one and three years old in wood.

Acetaldehyde
The compound sitting one step short of ethanol, which smells of bruised apple and sherry, binds most of the sulphite added to a cider, and is the chemical signature of oxidation.
Polyphenol oxidase
The copper enzyme that turns cut apple brown within seconds, and the reason a cidermaker has to decide, at the press, whether to let the juice oxidise or to stop it.
Total phenolics
The single number used to summarise everything phenolic in a juice, useful for comparing fruit and misleading whenever it is used to predict how a cider will taste.

Oxidative maturation
Ageing a cider with a deliberate, measured oxygen supply so that tannins polymerise and soften and an aldehydic character develops on purpose, which is not the same thing as the oxidation fault.

Holding cider in wood — which may mean an old neutral vat used simply as a vessel, or fresh or spirit-seasoned oak used as a source of flavour, and the two are not the same operation.
Tank maturation
Resting cider in stainless steel or a lined vessel, where the point of the container is that it contributes nothing and admits almost no oxygen.
Topping up
Refilling a maturing vessel as evaporation and racking losses lower the level, so that no significant surface of cider is ever left in contact with air.

About Dried apple
Dried apple is a useful midpoint descriptor because it captures a stage that panels otherwise record either as "still fruity" or as "oxidised", neither of which is accurate.
Its presence with the apple identity intact is a reasonable sign that oxidation has been gradual and controlled; where the apple identity has gone and only the dried character remains, the drink has moved on to sherry and walnut.

The Asturian regional agri-food research service, and the technical authority behind the Asturian cultivar classification and the analysis of sidra natural. SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.
