What causes it
Walnut character arises where condensed tannins have oxidised and polymerised extensively, generating quinone-derived products with a dry, husky, slightly bitter aroma, and where acetaldehyde is present to link tannin polymers together. The acetaldehyde-mediated condensation of procyanidins is central: it both changes the phenolic structure, softening astringency, and produces the specific aromatic register that tasters name as walnut. It requires tannin to begin with, which is why it is met in bittersweet and traditional ciders and rarely in dessert-fruit ones.

Acetaldehyde
The compound sitting one step short of ethanol, which smells of bruised apple and sherry, binds most of the sulphite added to a cider, and is the chemical signature of oxidation.
Procyanidins
The condensed tannins of cider fruit, whose chain length — not their quantity — decides whether the mouth registers bitterness or astringency.
Total phenolics
The single number used to summarise everything phenolic in a juice, useful for comparing fruit and misleading whenever it is used to predict how a cider will taste.
Dissolved oxygen
Essential to a healthy yeast population at the start of fermentation and the principal enemy of a cider from the moment fermentation ends.

Processes that increase this character, or preserve it where it would otherwise be lost.
Oxidative maturation
Ageing a cider with a deliberate, measured oxygen supply so that tannins polymerise and soften and an aldehydic character develops on purpose, which is not the same thing as the oxidation fault.
Barrel ageing
Holding cider in wood — which may mean an old neutral vat used simply as a vessel, or fresh or spirit-seasoned oak used as a source of flavour, and the two are not the same operation.
Topping up
Refilling a maturing vessel as evaporation and racking losses lower the level, so that no significant surface of cider is ever left in contact with air.
Bottle maturation
What happens to a cider after it is sealed in glass — which for most ciders is slow decline rather than improvement, and saying so is more useful than implying otherwise.

About Walnut
Walnut is one of the notes traditional producers work towards rather than against, and it is a reasonably reliable indicator of both tannin and age. A young cider does not show it and a low-tannin cider cannot.
It is distinguished from hazelnut, which is lighter and arises earlier, and from the cardboard note that marks oxidation having gone past any useful point.

- Does cider get better with age — Some does. Tannic, dry, bottle-conditioned ciders and ice ciders can gain for several years. Light, fruit-driven and commercially filtered ciders lose their aroma and do not gain anything in exchange.
- What are procyanidins in cider — They are the condensed tannins of apples: chains of catechin-type units whose length decides how much of the phenolic load reads as bitterness and how much as astringency. Two ciders with identical total tannin can taste nothing alike.
- What is sidra natural — Sidra natural is the still, dry, unfiltered cider of Asturias and the Basque Country, bottled without added carbonation and poured from a height to rouse it. It is tart, funky and made to be drunk in small measures poured one at a time.

Unusual among specialist cider writing in that it is primary-research-adjacent: the author is describing work he did, and cites the literature. This is why it is registered at tier 1 for chemistry while a general cider book is not.
