Sherry
A nutty, oxidised, faintly volatile character from acetaldehyde and sotolon in long-air-exposed cider.

What causes it
Two compounds carry this. Acetaldehyde, formed when ethanol is oxidised through the coupled oxidation of phenolics — the Fenton-type chemistry in which oxidised polyphenols generate hydrogen peroxide, which oxidises ethanol — supplies the sharp bruised-nut top note. Sotolon, a lactone formed slowly from precursors in acidic, oxidative conditions, supplies the deeper curry-and-walnut character of long-aged oxidative drinks. Both accumulate under prolonged air contact: a barrel not kept topped up, a cider left in a partly filled vessel, or the deliberate oxidative regime of some traditional cellars.
A degree of sherried character is intrinsic to Asturian and Basque cider and to some traditional English farmhouse cider, and those traditions are not compensating for a failure — the vessels and the regime produce it deliberately. In a cider sold on freshness the same character means air has reached it, and the fruit that has gone is not coming back.

Acetaldehyde
The compound sitting one step short of ethanol, which smells of bruised apple and sherry, binds most of the sulphite added to a cider, and is the chemical signature of oxidation.
Lactones
Cyclic esters that give peach and apricot character, formed from fatty acids and often carried in bound form, which is why stone-fruit notes can appear in a cider months after fermentation.
Dissolved oxygen
Essential to a healthy yeast population at the start of fermentation and the principal enemy of a cider from the moment fermentation ends.
Total phenolics
The single number used to summarise everything phenolic in a juice, useful for comparing fruit and misleading whenever it is used to predict how a cider will taste.
The organisms that make it
Where a specific organism is implicated rather than the fruit. Naming one answers a different question from naming a molecule: what is in the cellar, rather than what is in the glass.
Film yeasts
A functional grouping rather than a taxon: the oxidative yeasts that form a skin on cider exposed to air and consume its alcohol and acid.
Pichia membranifaciens
A film-forming yeast that grows as a skin on the surface of cider left in contact with air, consuming ethanol and acid and leaving the cider thin.

Processes that increase this character, or preserve it where it would otherwise be lost.
Oxidative maturation
Ageing a cider with a deliberate, measured oxygen supply so that tannins polymerise and soften and an aldehydic character develops on purpose, which is not the same thing as the oxidation fault.
Barrel ageing
Holding cider in wood — which may mean an old neutral vat used simply as a vessel, or fresh or spirit-seasoned oak used as a source of flavour, and the two are not the same operation.
Topping up
Refilling a maturing vessel as evaporation and racking losses lower the level, so that no significant surface of cider is ever left in contact with air.
Cellar storage
Holding packaged cider in conditions that let it change slowly and predictably, where stability of temperature matters more than the temperature itself.

The cumulative effect of oxygen on finished cider: fruit aroma flattens, colour deepens towards amber, and a bruised-apple or sherry-like character replaces the fresh one.

About Sherry
Sherry is the descriptor around which the oxidative argument in cider turns, in the way sticking plaster is for the phenolic one. Sidra natural is expected to show it and is poured from a height partly to volatilise and disperse some of what oxidation has produced; a modern sparkling cider showing the same note has failed.
A useful practical test is whether fruit character survives underneath. Controlled oxidative ageing in a tannic cider leaves structure and depth; runaway oxidation strips the fruit and leaves acetaldehyde with nothing behind it.

SERIDA’s own site has not been opened; what CiderHQ has read is SERIDA’s varietal characterisation as republished by the Consejo Regulador of DOP Sidra de Asturias, which credits it explicitly. The Asturian measurements therefore cite the Consejo rather than SERIDA — citing the body that did the work, at a document CiderHQ has not seen, would be exactly the kind of borrowed authority this register exists to prevent.

Unusual among specialist cider writing in that it is primary-research-adjacent: the author is describing work he did, and cites the literature. This is why it is registered at tier 1 for chemistry while a general cider book is not.
