What causes it
Hazelnut sits earlier on the oxidative path than walnut and is driven by a different balance: moderate acetaldehyde, low levels of benzaldehyde from phenolic oxidation, and the savoury compounds of yeast autolysis, without the heavy tannin polymerisation walnut requires. It is met in traditional-method sparkling cider with extended lees ageing and in still ciders with a year or two of gentle air contact, and it is one of the notes that develops before fruit character has been lost.

Acetaldehyde
The compound sitting one step short of ethanol, which smells of bruised apple and sherry, binds most of the sulphite added to a cider, and is the chemical signature of oxidation.

The largest usable nitrogen fraction in apple juice, and the raw material from which yeast builds both its own protein and most of the aroma compounds a cider carries.
Total phenolics
The single number used to summarise everything phenolic in a juice, useful for comparing fruit and misleading whenever it is used to predict how a cider will taste.

Bottle conditioning
Carbonating cider by letting a second fermentation finish inside the sealed bottle, so the gas is generated where it is going to stay.

About Hazelnut
Hazelnut is the descriptor for oxidative development that has not yet cost the cider its fruit, and its co-occurrence with surviving esters is what distinguishes it from the later stages.
In sparkling cider made by the traditional method it is closely associated with autolytic ageing and arrives alongside the yeast-extract and beeswax notes from the same source.

- Does cider get better with age — Some does. Tannic, dry, bottle-conditioned ciders and ice ciders can gain for several years. Light, fruit-driven and commercially filtered ciders lose their aroma and do not gain anything in exchange.

- How do you pour bottle conditioned cider — Stand the bottle upright for a day, chill it, and pour in one continuous movement, stopping when the sediment reaches the shoulder. Some traditions deliberately rouse the sediment instead, and both are defensible.
