Low acid, high tannin. The class that has no real equivalent in dessert fruit and that defines West Country cider.

Basis: Below about 0.45% w/v acid and above about 0.2% w/v tannin.

Aroma

No aroma descriptors are recorded for Balls Bittersweet, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. Its acid is unusually high for a bittersweet, which is the one thing that would make a single-variety cider from it drinkable rather than flat. Nothing in the record says it has been done.

About Balls Bittersweet

Balls Bittersweet is a West Country cider apple that Long Ashton measured at 0.28 per cent acid and 0.28 per cent tannin. Both figures clear the thresholds that define the bittersweet class — acid below 0.45, tannin above 0.20 — without straining either, which makes it about as typical a bittersweet as the composite table contains.

That ordinariness is worth having. A reader who meets only the famous cultivars comes away with a distorted sense of the class: Dabinett at 0.29 per cent tannin is treated as a benchmark, Médaille d’Or at 0.64 as a bittersweet, and Sandford Jersey at 0.62 as another, when in fact the last two are outliers by a factor of two. Balls Bittersweet sits where most of the class sits, and its slightly high acid for the band — 0.28 against a bittersweet median nearer 0.21 — makes it easier to use at proportion than the very low-acid fruit.

What is not known about it is most of it. No flowering record, no cropping observation, no modern analysis, and no documented origin beyond a surname. Cultivars like this are the great majority of the English cider repertoire, and the honest record of one is a short record.
