Low acid and low tannin. Fruit that contributes sugar, alcohol and body but little structure or sharpness.

Basis: Below about 0.45% w/v acid and below about 0.2% w/v tannin.

Aroma

No aroma descriptors are recorded for Sweet Coppin, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

About Sweet Coppin

Sweet Coppin is one of the fruit that explains why the Long Ashton scheme has a sweet class at all. It gives a lot of sugar, very little acid and very little tannin: pressed alone it makes a juice that is pleasant to drink and ferments to a cider that is pleasant and forgettable. Its function in a traditional Devon blend is to raise the alcohol and soften the whole without pulling it in any particular direction.

Its tannin sits at the upper edge of the sweet class, close enough to the threshold that in a concentrated season the fruit reads as a very mild bittersweet. That is worth knowing because a blend built on Sweet Coppin will carry slightly more phenolic weight than the classification implies, and slightly less than a maker expecting a bittersweet would want.

A note on names: Coppin appears attached to several Devon apples, and used without the "Sweet" it identifies nothing. Old Devon orchard records listing "Coppin" cannot be resolved to this cultivar without corroboration.
