Recorded interactions

Written records, each citing the mechanisms it rests on.

Interaction holds

Dry cider

Olives are salty and oily and carry a residual bitterness from oleuropein that curing never entirely removes; the salt suppresses the cider’s own bitterness, and the acid clears the oil.

Mechanisms: Acid cuts fat · Sweetness balances salt

Interaction holds

Sidra natural

A sharp Spanish cider handles brine, oil and the vinegar many olives are dressed with.

Mechanisms: Acid cuts fat · Acid matches acid

Holds only under stated conditions

Medium cider

Where the brine is very heavy, sugar lowers the perceived salinity — though it is partly exposed by the olives’ own acidity.

Mechanisms: Sweetness balances salt

Strength is reliability, not rating. What each mechanism claims, and how far.

Combinations that work badly

Published as prominently as the cases that work.

Styles that clash with Olives
  • West Country farmhouse cider The olives’ residual bitterness adds to the cider’s tannin rather than being suppressed by it, and the brine has already left the palate short of salivary protein.

More on Olives

Olives cannot be eaten straight from the tree: they carry oleuropein, an intensely bitter phenolic glycoside that curing in brine, lye or salt breaks down. Even a well-cured olive keeps some of it, which is why a faint bitterness is part of the flavour.

That bitterness is the property to watch. It is a phenolic bitterness of the same general kind a cider’s procyanidins produce, and the two add rather than cancel — the brine’s salt suppresses some of it, but not enough to make a firmly tannic cider comfortable.

  • Acid cuts fat The dish is rich and this style is high in acid, which clears the palate between mouthfuls.
