Bittersweet
Low acid, high tannin. The class that has no real equivalent in dessert fruit and that defines West Country cider.
Basis: Below about 0.45% w/v acid and above about 0.2% w/v tannin.
Long Ashton recorded 0.23% acid and 0.62% tannin. That is comfortably inside the bittersweet quadrant on acid and far beyond the 0.20% tannin threshold — only Médaille d’Or, at 0.64%, is higher in the composite table.

Aroma
No aroma descriptors are recorded for Sandford Jersey, and for a great deal of cider fruit that is a finding rather than a gap. Bittersweet apples in particular contribute tannin, sugar and body while being close to aromatically mute, and most of what a cider made from them smells of was produced by the fermentation rather than carried in by the fruit. CiderHQ publishes the absence rather than filling the space with descriptors nothing supports.

At 0.62% tannin and 0.23% acid there is nothing in the juice to balance the astringency. Fruit at this end of the range is a blending component by construction.
About Sandford Jersey
Sandford Jersey is a mid Devon bittersweet, and its interest is almost entirely in one number. The Long Ashton composite table gives it 0.62 per cent tannin against 0.23 per cent acid, which puts it second only to Médaille d’Or across the forty-two cultivars in that table and roughly three times the tannin of Dabinett. Fruit at that level is not a cider on its own; it is a component measured into a blend in single-figure percentages and relied on to give structure to everything around it.
The name needs unpacking, because it misleads. “Jersey” in West Country cider naming has nothing to do with the Channel Island. It is an old Devon and Somerset word for a bittersweet cider apple, and it attaches to a dozen unrelated cultivars — Chisel Jersey, Ashton Brown Jersey, White Jersey, Broadleaf Jersey and others — none of which are related to each other except by class. Sandford is a village near Crediton, so the name reads as “the bittersweet from Sandford”.
Beyond the analysis, very little is documented. CiderHQ has no flowering record, no cropping observation and no modern trial figure for it, and the record says so rather than filling the gaps from what similar cultivars do. What can be said is that the Long Ashton figure was measured on freshly pressed juice at one Somerset site over a period spanning several decades, and that it reaches this site through a printed compilation rather than from the station’s own tables.
Names, origin and identity
Cultivar naming is the hardest problem in cider fruit data. The same tree carries different names across ten miles, and two different trees have shared a name for two centuries.

Named for the village near Crediton in mid Devon. “Jersey” in Devon and Somerset naming does not mean the island; it is an old West Country word for a cider apple of the bittersweet class, and it attaches to a dozen unrelated cultivars.

Registered separately from the same author’s Science of Cidermaking, and at a lower tier, because its evidential character is different. The Science of Cidermaking is a chemist writing about work he did; this page is that chemist transcribing other people’s tables, and CiderHQ can vouch for the transcription without vouching for what lies behind it. It carries three tables: the Long Ashton composite for forty-two cultivars, credited to Bulmer’s Pomona (1987) and Beech and Carr (1977); a late-1970s New York analysis credited to unpublished work printed in a 1989 food-technology chapter; and a 2014 Virginia polyphenol study. Every figure CiderHQ takes from it records that chain.
