Why are animals grazed in orchards, and is that agroforestry?
In short
Grazing under standard orchard trees is the oldest form of orchard agroforestry in Britain: the trees crop in autumn while the grass beneath carries stock for most of the year, so one hectare does two jobs. It works only where the trees are tall enough to be out of reach and the stock are off the ground before harvest.
Modern agroforestry describes the same idea in more formal terms and extends it to new plantings, but the constraints — bark damage, fouling of fruit, and the risk to ruminants that gorge on windfalls — have not changed.
Two crops on one hectare
The traditional standard orchard is a silvopastoral system in everything but name. Widely spaced trees let enough light through to keep a productive sward beneath them, and that sward is grazed by sheep or cattle for most of the year. The fruit crop occupies the land for a few weeks in autumn. Nothing else about the field changes.
For a mixed farm this was straightforward arithmetic: the orchard was not a field taken out of production but a field with an extra output. It is also why so much orchard was planted on farms that had no interest in selling cider. The trees paid for themselves through the farm household, the labourers’ allowance and the occasional sale, while the pasture went on being pasture.
The arrangement has a real agronomic cost that is often left out of the romantic version. Trees shade grass, and grass competes with trees. A grazed orchard on thin ground will produce less grass than an open field and less fruit than a clean-cultivated orchard, and the total may still be worth more than either alone — but the trade is real, and on good arable land it does not pay.
Which animals, and when
Sheep are the usual choice under standards and half-standards. They keep the sward short, which matters at harvest because fruit has to be found in it, and they are small enough not to damage a properly formed tree. They will nonetheless strip bark in hard winters when grazing runs short, so young trees need guards and older trees need watching.
Cattle can only be run under full standards, and even then they rub, break low branches and compact wet ground around the roots. Where cattle are used, tree guards are effectively compulsory. Poultry and geese are used in some orchards and have the incidental benefit of eating pest larvae in the sward, though at any scale they bring their own nutrient and hygiene questions.
The absolute rule is that stock must be off the orchard before fruit begins to fall, and must not return until the crop is cleared. Fruit lying in a field that has just carried livestock is fruit that will be gathered with whatever the livestock left, and that is a hygiene problem in a product that is not pasteurised before fermentation.
Agroforestry as a modern proposition
Interest in agroforestry has brought new attention to orchard systems that were previously described simply as farming. The formal case is that a widely spaced tree crop over pasture or arable can produce more total biomass per hectare than either component alone, buffer the microclimate, hold carbon in long-lived woody tissue, and reduce run-off on sloping ground. Cider and perry orchards are among the clearest working examples in Britain, since they have been doing it continuously for centuries.
New agroforestry plantings tend to use rows of half-standards through arable or grass alleys, which is closer to a modern alley-cropping layout than to a traditional orchard. The trees are spaced for machinery rather than for grazing, and the fruit is a secondary output. Whether such a planting delivers habitat value comparable to an old standard orchard is doubtful in the short term — the features that matter take decades to develop — but the trees will eventually be old, which no bush orchard ever gets to be.
For a cider maker, the relevance is practical rather than ideological. Grazed and mixed orchards are typically lower-input, which means lower nitrogen in the fruit and lower assimilable nitrogen in the juice. That shows up as sluggish fermentation and, sometimes, sulphidic character in the vat. It is one of the clearest instances of an orchard decision landing directly in the glass.
